strawberries + cream protein balls

hey hi hello party people. I promise i’m still here and I promise that i’m working on more recipes to weave into honey street for spring! I just… don’t always feel like it. and sometimes have less than zero stellar ideas. and sometimes I get wrapped up in other things like work, shoveling, drinking too much wine with my girlfriends, and other activities that help distract me endless winter in minnesota.

but I digress. because despite my cursing to the heavens and general avoidance, it is still winter and I do in fact have a lot of things to cook. and eat!! so here we go. protein balls! they’re not the sexiest snack but they are the cutest and easiest and I have them around 1000% of the time. i’ve made roughly 4,000 different flavors of protein balls and I am super excited about these! they’re sweet, bright, they feel spring-summery and are a nice contrast from the typical peanut butter-chocolate-blah-blah-blah. strawberries + cream protein balls
makes 14 protein balls
prep time: 10 minutes
cook time: 1 hour, for chilling

1c cashews
1c freeze-dried strawberries
1c shredded coconut
1 scoop vanilla protein powder (I like SFH Pure.)
3/4c dates
1/2c honey
1/2c coconut butter (if you’ve never played around with coconut butter - do it now!!! it is basically frosting.)
1-2tbsp unsweetened almond milk

pulse all ingredients except for the almond milk in a food processor until a dough forms. it will be a little chunky and might be dry - that’s ok! then, add 1tbsp of almond milk and pulse again. the dough should come together a bit more, and if it’s still dry, add a second tbsp of almond milk. then, roll into golfball-sized balls and chill in the fridge for at least 1 hour.
*I dusted my protein balls with more crushed dried strawberries - v much recommend.
