chickpea collagen cookie dough bites

there are a million things I could say about these bites because we’ve fallen in love v v quickly, but instead i’ll just leave it at this: they are ridiculously good, the perfect treat, the best midnight snack, salt-sweet-satisfying, and the cutest/tastiest way to kick off a monday. 12/10 recommend making them asap and then making another batch because I guarantee the first will not last long.

chickpea collagen cookie dough bites
makes 6-8 bites
prep time: 10 minutes
cook time: / 1 hour for chilling

1c chickpeas, rinsed, drained, and skin removed *I like to lay a thick layer of paper towels and set the chickpeas on top. using another thick layer of paper towels, gently rub the chickpeas until the top layer of skin lifts off.
1/2c almond butter
2tbsp maple syrup
1tsp vanilla extract
1/4c coconut flour
2 scoops collagen peptides *I like Vital Proteins - total game changer.
1/2c mini chocolate chips
Malden sea salt, for sprinkling on top

pulse all ingredients except for the salt in a food processor until a smooth dough forms (this may take a few minutes.) using a cookie scoop, scoop bites onto a parchment-lined plate. sprinkle with salt, then chill for at least an hour before digging in.
