honey dijon sheet pan chicken

let’s discuss sheet pan dinners. are we a fan? i waffle between it feeling like a total cop-out because they require little to no effort and wholly embracing them because they require little to no effort. re: toss everything together, place on pan, drink wine for a while it roasts. despite it’s inherent laziness, this is a pattern I can get on board with. re:re: wine.

this sheet pan dish is super classic, super comforting, and is a good idea for literally any occasion. crispy skin-on chicken thighs, potatoes, honey, dijon, balsamic? are we excited yet?? KGREAT! please carve out an hour to make this for dinner and give yourself the biggest pat on the back. *I wholeheartedly suggest taking on this endeavor with a glass (or 2. or 3?) of your favorite wine.

honey dijon sheet pan chicken
makes 4-5 servings
prep time: 10 minutes
cook time 40-50 minutes

2lbs boneless skinless chicken thighs (4-6 thighs depending on how big they are)
1lb baby potatoes, sliced in half
1 onion, chopped into large pieces

honey dijon sauce:
1/3c extra virgin olive oil
1/4c honey
1/4c balsamic vinegar
1tbsp course Dijon mustard
3 cloves of garlic, minced
2tbsp fresh rosemary, chopped
big pinch of salt and black pepper

preheat the oven to 400.
line a baking sheet with parchment paper or foil. whisk the sauce ingredients until combined. then, toss half of the sauce with the potatoes and onions, and place on the baking sheet. then, arrange the chicken thighs amongst the potatoes and onions. sprinkle each thigh with salt and pepper, and rub the remaining sauce over each.

roast for 40-50 minutes or until the potatoes soften and the chicken is cooked through to 165.
