banana chocolate chip flax waffles

happy mondaaaaayyyyyyy!

I try to do this thing where I tell myself I love mondays and that they’re full of infinite possibilities regardless of how wonderful the weekend was or how many looming to-do’s await me throughout the week, and i’d give it a 7/10 success rate with the sliding scale being that i blindly believe myself and that it really does give me the invisible boost to get shit done and be excited about it. (plus, everyone knows that tuesday is actually the worst because there is absolutely nothing awesome about any given tuesday, amiright?) if you are in the ‘ugh mondays no thanks’ crew, i’m here to try and gently persuade you with waffles, because if there’s one thing I believe, it’s that breakfast food can cure pretty much any ail; monday pitfalls coming in high on the list.

here’s my pitch: breakfast for dinner is FUN! always! nutty, good-for-you banana chocolate chip waffles for dinner? with a side of bacon and eggs if you’re really going for it? i’m here for this. breakfast for dinner in bed snuggled up with a book and an early bedtime because hey, hi we are adults and we make our own rules? sign me up. it’s campy and secretly thrilling and i’d wager it’s probably scientifically proven to shake any case of the mondays.

you could also build yourself a waffle sandwich with extra bananas, almond butter, and some berries and then we’d really be having a party. I am 1000% doing this.

banana chocolate chip flax waffles
makes 8 mini waffles, or 4 large waffles
prep time: 5 minutes
cook time: 10 minutes

3 eggs, lightly beaten
1 banana, mashed
1tbsp maple syrup
1tsp vanilla extract
3/4c almond flour
1/4c flax meal
1tsp baking powder
1/2tsp baking soda
pinch of salt
chocolate chips, optional

whisk the wet ingredients until smooth. then add in the dry, and whisk again until combined.

grease a waffle iron with coconut oil spray. pour 1/4c of batter onto the iron and cook until golden brown. repeat until all the waffles have been cooked. top with extra banana slices, almond butter, maple syrup.. anything goes!
