balsamic braised crockpot short ribs

raise your hand if you’re part of the ‘would rather get stung by a team of jellyfish 4,000 times than go out on new year’s eve’ club. ok GREAT we are going to get along so well! if you, like me, have less than zero plans and fully anticipate being sound asleep before 10pm after a riveting evening re-watching game of thrones and vaguely thinking about 2019 to-do’s, let’s make tonight a little more magical. super easy crockpot short ribs that will make you feel fancy AND cozy and elevate your NYE agenda to 100% it is!

balsamic braised crockpot short ribs
4-6 servings
prep time : 10 minutes
cook time : 4-6 hours

for the short ribs :
2-3lb chuck roast
1 15oz. can tomato sauce (look for one with no sugar added)
1/2c sun-dried tomatoes in oil
1/2c balsamic vinegar
1c pitted + chopped dates
1 onion, diced
4 garlic cloves, minced

rub :
1tsp dried sage
1tsp dried rosemary
1tsp garlic powder
1/2tsp chili flake
2tsp sea salt
1tsp black pepper

for the sweet potatoes :
2 sweet potatoes
1/4c unsweetened almond milk
1tbsp ghee (I like Fourth & Heart)
1tsp fresh rosemary, chopped
1tsp sea salt
1tsp black pepper

using paper towels, pat the chuck roast dry. then, rub the dry rub all over, coating each side. place the roast and remaining ingredients into the crockpot and cook on low for 4-6 hours. you’ll know the short ribs are done with they’re fork-tender, i.e, they’ll gently fall apart with the smallest prod.

once the ribs are cooked, turn the crockpot to ‘brown,’ and shred the meat, letting about 1/2 the remaining sauce absorb.

meanwhile, preheat the oven to 400. bake the sweet potatoes for 45-60 minutes. after they’re baked + soft, remove the skins. using a hand mixer, mix the sweet potatoes with the remaining ingredients until smooth.

10/10 recommend serving these with a big glass of red wine + early bedtimes encouraged.
