whole grain banana chocolate chip chia muffins

i’ve eaten so many of these muffins in the last couple weeks that I wouldn’t be shocked if woke up tomorrow and just was a muffin. i’ve been sipping my coffee with an early morning muffin, mowing down a muffin in the car on my way to work, (anyone else a serial car-eater?) popping a muffin drizzled with a little almond butter in the afternoon, and one night i was so lazy (empowered?) i had a few for dinner.

i think my muffin parade is equally fueled by how good they are but also that i finally nailed a muffin recipe. this is not a brag because these muffins are no-pressure, super low-commitment and you probably already have everything in the pantry, but in truth: I suck at muffins. breads, fine. cookies, sure. but muffins? muffins are my baking kryptonite and I DON’T KNOW WHY. i wanted them to be my usual jam of almond flour or something ‘healthier,’ so i fiddled with a lot of muffin batter, failed a bunch, and finally said ok yeah real flour is fine. totally get that there are so, so many people who can’t eat flour, but for the rest of us, when did we cancel gluten? and why?? ‘healthier’ is a spectrum and these are delicious and wholesome and tucked with goodies and i’m just so proud these cuties turned out.

whole grain banana chocolate chip chia muffins
makes 12 muffins
prep time: 10 minutes
cook time: 22-25 minutes

2 bananas, mashed well
2 eggs
2/3c unsweetened vanilla almond milk
1/3c honey
1/3c olive oil
1tbsp apple cider vinegar (trust!)
1tsp vanilla extract
1c white flour
3/4c whole wheat flour
1 1/2tsp cinnamon
1tsp baking powder
1/2tsp baking soda
2tbps chia seeds
1/4c rolled oats (optional)
1/4c (ok ok, more) chocolate chips

preheat the oven to 350.
whisk the wet ingredients until smooth. add all the dry ingredients except the chia seeds, oats, and chocolate chips, and whisk again until just combined (you don’t want to overmix!) then, gently fold in the chia seeds, oats, and chocolate chips.

line a muffin tin with paper liners or spray to prepare. using a scoop, divide batter into the muffin tin. I like to top with a few more sprinkles of oats and a couple chocolate chips on each one, mostly because it’s cute but then also so you get a little bit more of the goodies.

bake for 22-25 minutes or until the muffins are golden. let cool for at least 15 minutes before removing the muffins from the muffin tin.
