sheet pan sausage, potatoes, shallots, and apples

welcome to this week’s reckoning of: easy is not lazy, don’t overcomplicate this, and, maybe if you meal-prepped like you know you should you’d feel like you have your ‘ish together, lady!

while i am not an inherently lazy person i am coming off of a lovely several days tucking into takeout from incredible holes-in-the-wall out in d.c. (my soon-to-be new home, ah!) and it’s been super easy/delicious to sidestep actual adult responsibility and shove insanely delicious afghan lamb and bagels with jalapeño, apple cream cheese, and CHIPS (this was absolute genius and i was immediately transported back to being 10 years old and eating bologna sandwiches with ruffle chips - did anyone else do this or was my family weird?) into my mouth instead of, you know, eating a vegetable.

cue a sheet pan dinner that is quick (*not lazy,) uncomplicated, unfussy, and only requires a few ingredients. let’s be gentle with ourselves, right?

a few things about this recipe before we get started:

- you only need 6 star players. sausage, baby potatoes, shallots (or an onion if that makes your life easier!), an apple, rosemary, and garlic. it’s highly likely you might just have all these things in your fridge already.
- slice slice toss roast toss, done. seriously.
- this is not a fancy recipe by any means, but toasty golden potatoes, caramel-y shallots, crisp sausage, and woodsy hearty rosemary make it feel like the most luscious, elevated dinner staple.
- you can 100% go wild and add peppers, mushrooms, zucchini - make this work for what you’ve got on hand!
- don’t skip the vinaigrette at the end! it’ll take 4 seconds to whisk while you wait for everything to roast and gives your sheet pan dinner a tangy hug that is ** chef’s kiss. **

makes: 4 servings
prep time: 5 minutes
cook time: 30 minutes

4 sausages, sliced at an angle (i used chicken apple sausages)
1lb. baby red potatoes, quartered
2-4 large shallots (I found 2 BIG bois so that’s all i needed!), sliced
1 apple, sliced
2 cloves of garlic, minced
1tbsp olive oil
1tsp salt
1tsp black pepper
1 sprig of rosemary, chopped

to toss with right after:
a 1tbsp olive oil
2tsp dijon mustard
1tsp apple cider vinegar
1tsp maple syrup (honey works here, too)

lots more rosemary, for serving

preheat the oven to 425.
arrange the sausage, potatoes, and shallots on a large baking sheet, and toss with the oil and spice. roast for 15 minutes, then add the apples, and give everything a good toss again to combine the apples.. roast for the remaining 15 minutes until the sausage is crispy, the potatoes are golden and tender, and the apples become soft.

meanwhile, whisk the oil, mustard, vinegar, and syrup until smooth. pour over the sausage, potatoes, shallots, and apples, and serve with extra rosemary.
