maple almond sea salt bites

hello, good morn/evening, and welcome to what might be the gentlest foray into fall recipes by way of soft, warmly spiced, maple-y snacks, scooped into small bites in the cutest possible way so as not to abruptly put a hard stop on summer. it is kind of almost fall, which i’ll argue as any basic b would is the best, but I really love this in between season; the humidity has all but disappeared here, leaving us a perfect minnesota at her prime peak. i’ve been going for a walk with a podcast around a shaded loop in my neighborhood every morning, and sprawling belly-down on a blanket with a book and a beer outside almost every night as the sun goes golden and the air gets still. it’s unhurried, the sky is glowing, and it’s not-quite-cold. it’s the sort of thing you have to know rather than describe, but it’s something i’m fairly certain everyone in the north can feel stitched into their ribs, through their fingertips and toes. it’s the sort of thing you pull to when people who are not from here ask ‘ok but why do you live there, isn’t it winter all the time,’ and you say ‘yes, but, our summer.’

these bites taste like pancakes, which reminds me of cabins and crackling fires and stars over lakes and wet grass in the morning and the quiet i’m convinced we only have here. i’ll be waking up extra early to have a few with my coffee outside in the morning, and i hope you love them, too.

maple almond sea salt bites
makes: 14-16 bites
prep time: 15 minutes
cook time: -

1c dates, pitted
1c almond butter
1c maple syrup
1 1/2c almonds
1/4c flaxmeal (almond flour will work here, too)
1tbsp almond milk
1 1/2tsp cinnamon
1/2tsp allspice (a cardamon + nutmeg blend would be great, too)
1tsp sea salt + more for topping (I like maldon sea salt flakes for this)

pulse all ingredients in a food processor until a thick dough forms. using an ice cream scoop, scoop each bit and place them on a parchment-lined plate or tray. top each bite with a little extra sea salt, and chill in the fridge for at least 1 hour before digging in.
