grain-free dark chocolate olive oil cookies

galentine’s day is fast approaching, and if you too are having a celebration of female warriors, powerful goddesses, and fearsome, stunning land mermaids, then get ready to flag this recipe and shower all the badass women in your life with rich, chewy, dark chocolatey, super foody cookies. they’re grain free, naturally sweetened, you don’t have to f*ck with having to chisel away at rock-solid coconut oil, and most importantly -they’ll make you feel like a gosh darn QUEEN.

grain-free dark chocolate olive oil cookies
makes 10 cookies
prep time: 10 minutes
cook time: 11-13 minutes

1 1/2c almond flour
1/4c coconut flour
1/4c good quality cocoa powder
1/2tsp baking soda
1/2tsp sea salt
1 egg, lightly beaten
1/4c extra virgin olive oil
1/2c maple syrup
1tbsp goji berries *optional
1/4c dark chocolate chips

preheat the oven to 350.

using a hand mixer, mix the wet ingredients until smooth. add the dry ingredients except for goji berries and chocolate chips, and mix until combined. then, fold in the goji berries and chocolate chips (will not judge if you add waaaaay more chocolate chips.) next, using a cookie scoop, scoop batter onto a parchment-lined baking sheet.

bake cookies for 11-13 minutes until the tops become crackly but the center still feels soft. let cool completely on a cooling rack before tucking in. 10/10 recommend serving with a little cup of almond milk and a glass of bubbles.
