dark chocolate cranberry oat breakfast cookies

ok picture this: the perfect little fall snack that you can also claim as breakfast, made up from things you probably already have in the pantry and requires no chopping, roasting, baking, or cooking of any kind.

i’ll give you some clues: it has oats, nut butter, dried cranberries, pumpkin seeds, chia seeds, aaaaaand chocolate (for maximum perfect snacking opportunities, of course) and it’s pictured above and below. now imagine yourself rushing around your house in the flurry of the morning and going CRAPIDIDN’TEAT and then remembering that you’re a meal prep genius who’s already prepared for this.

cue you: grabbing a couple of these raw dark chocolate cranberry oat breakfast cookies and saving your own day.

anything is possible here! future you will thank current you for having the foresight to know that sometimes last minute grab-and-go snacks are super essential and truly a blessing in these messy times.

dark chocolate cranberry oat breakfast cookies
makes: 12 cookies
prep time: 15 minutes
cook time: -

1 1/2c old fashioned oats
1/2c dried cranberries
1/2c dark chocolate chunks
1/2c cashews
1/3c chia seeds
1/3c pumpkin seeds
1c cashew butter + more for drizzling
1/4c maple syrup
1/4c vanilla protein powder (I use SFH - it’s delicious and works in recipes like this + smoothies!)
1tsp cinnamon
1/2tsp nutmeg
1/2tsp salt

pulse all ingredients in a food processor until a dough forms - it should stick together if you pinch it with your fingers. roll into pucks, smoothing along the edges, and place on a lined plate or tray. drizzle with extra cashew butter (I also like to sprinkle extra goodies on top) and chill in the fridge for at least a half hour.
