crockpot coconut chicken street tacos with pineapple avocado sauce

the title of this recipe is a mouthful but honestly so are these tacos in the best way possible. there is a lot happening here flavor-wise and i’m 11/10 jazzed about them, so I feel I should share my original title which was… crockpot coconut green curry chicken thigh street tacos with pineapple avocado cilantro lime creamy died and gone to heaven sauce. say it 10x fast while dancing a jig and I will hand deliver a batch of these to you.

I like these for a lot of reasons but mostly because it makes an insane amount of chicken which I’ll be thrilled to spoon into bowls, snack on, dunk in more died and gone to heaven sauce, add to enchiladas, and swan dive into this week. it’s also ridiculously easy, and a fun play on atypical taco flavors which I highly suggest at this juncture.

crockpot coconut chicken street tacos with pineapple avocado sauce
makes: 2lbs of chicken; theoretically 12-18 tacos
prep time: 15 minutes
cook time: 4-6 hours

for the chicken:
2lbs boneless, skinless chicken thighs
1 onion, sliced
1c full-fat canned coconut milk (you want some of the water and some of the cream)
1/4c chicken stock/broth
1/4c coconut aminos (can sub soy sauce)
1/4c rice wine vinegar
juice from 2 limes
2tbsp green curry paste
1in. piece of fresh ginger, minced
2 garlic cloves, minced
1/2c fresh cilantro
1/2c fresh basil
2tsp salt

for the sauce:
1 avocado
1/2c diced pineapple
1c cilantro
juice of 2 limes
1/4c avocado oil
1tbsp sriracha (omit if you don’t like the heat)
big pinch of salt

for the tacos:
tortillas (I used Siete Cassava + Chia)
diced pineapple
black beans
red onion
scallions
cilantro

place chicken thighs and onion in the crockpot. whisk the ingredients for the chicken and pour over the chicken and onions, and stir to coat fully. cook on high for 4-6 hours. once cooked, remove chicken and shred using 2 forks.

meanwhile, blend the ingredients for the sauce until thick + smooth.

assemble tacos to your liking! extra cilantro, onion, and sauce very much recommended.
