cinnamon toast crunch protein waffles

i hope you don’t mind that i spent far longer than i care to admit daydreaming about the possibility of these waffles. breakfast food is a deep love language for me, and waffles might be held upon the highest throne. they’re potential to be crispy is far greater than pancakes, and the syrup-pooling factor clearly catapults them to the top of an amazing-breakfast-pedastal. re: me, bowing down.

I would like to further sell you on these waffles by telling you that i sprinkled the batter with a scandalous amount of cinnamon, whisked in coconut sugar, and packed them with protein by using oat flour and protein powder as our base. the goal was that they tasted like a bowl of cinnamon toast crunch except they’re better because they’re in WAFFLE FORM, and then we get to pour as much (very much) syrup on them as we want.

ok, so now that we’re very much on board with this cinnamon crunchy protein-packed waffle situation, i would like to tell you that these waffles are made with SFH Vanilla Pure protein powder, and it’s truly the only protein powder brand i’ve used for the last 5+ years. they use only clean ingredients to make the best tasting, best blending, and most versatile protein powder out there. i use the Pure Whey flavors, but they have plant-based varieties, too (love.)

a few things before we get started:

- these waffles are great to make ahead for weekly meal prep! they store well in the fridge or freezer and are perfect for toasting (or eating cold if you’re in a super hurry) when you’re ready
- i only tested these with the oat flour + protein combo and can’t say for sure if other flours will work
- I didn’t these waffles with a flax egg, but i would assume the results would be similar
- more is more is more with the cinnamon, and the coconut sugar is key to the right sweetness + crunch!
- SFH is my favorite protein powder and blends so well into the waffle batter. it’s the only protein powder i use and can’t recommend it for baking and drinking enough!

cinnamon toast crunch protein waffles
makes: 10-12 mini waffles
prep time: 10 minutes
cook time: 10 minutes

1 1/4c oat flour (you can blend rolled oats!)
1c SFH vanilla protein powder
2tsp cinnamon
1tsp baking powder
1/2tsp salt
2 eggs
1c unsweetened almond milk (or any milk you like)
1/3c coconut sugar
1tbsp maple syrup

butter or ghee, maple syrup, nut butter, and cinnamon for serving

preheat the waffler maker.
in a large bowl, whisk the wet ingredients until smooth. add the dry ingredients, then whisk again until everything is incorporated.

spray the waffle maker with cooking spray prior to cooking each waffle. using a 1/4c measure, pour the waffle batter into the maker, and cook until golden brown.

top with your favorite toppings (big fan of butter and maple syrup with an extra sprinkle of cinnamon over here!)

you can store leftover waffles in the fridge or freezer!
