crispy bbq cauliflower with peppered honey

hi, hello, happy monday, and welcome to my latest obsession where i try to make vegetables as sexy and exciting as possible. NOT POSSIBLE, you say? wellllllll, let me tell you, breading and roasting and dunking cauliflower into spicy tangy BBQ sauce and then giving it a double dunk into peppery honey might just change your tune. i’m also now making a mental note to dunk everything in honey because it’s absolutely always the right call.

this recipe is the tiniest bit tedious (dunk, roll, arrange, dunk, roll, arrange, repeat repeat repeat,) but i promise that for the littlest bit of extra exerted effort, the return will be enormous and delicious. promise.

crispy bbq cauliflower with peppered honey
makes: 4 servings
prep time: 15 minutes
cook time: 45 minutes

for the cauliflower:
1 head of cauliflower, cut into florets
1c almond flour (or, any flour you prefer!)
1 1/2c water
1tbsp garlic powder
2tsp salt
2tsp black pepper
2c panko breadcrumbs (skip if gluten free)
2c BBQ sauce (I used this one from primal kitchen - love, love, love)
scallions, chopped

for the peppered honey:
1/4c honey
1tsp black pepper

preheat the oven to 450.
whisk the flour, water, garlic, salt, and pepper until it resembles pancake batter - you’ll want it a little on the thin side, so add more water as needed.) add the panko breadcrumbs in a separate bowl.

set up your dunking station: batter - panko - parchment-lined baking sheet. working one floret at a time, dunk each piece into the batter and shake off any excess. then, roll in the panko, and place on the baking sheet. repeat this process until all the cauliflower is coated.

bake for 15 minutes, then flip, and bake for 10 minutes more. then, coat the cauliflower in the BBQ sauce, and bake for another 15 minutes.

meanwhile, stir the pepper into the honey.

once the cauliflower is done, add more BBQ sauce if you like, drizzle in peppered honey, and top with scallions.
