sweet + sticky thai honey chicken drumsticks

new year’s resolutions are a tricky thing; i find you’re either very much in one camp, the one that makes a short novella of promises to oneself that will surely change and drastically improve who you are and who you’d like to be versus the 3-days-ago version of who you were and who you meant to be. or, you’re in the other, and you don’t. i happen to like a universal reason to take inventory of myself - what’s working, what i’m not thrilled by, which habits i’d like to continue, which patterns i’d like to keep an eye on. i sort of see it as the world taking a collective big breath and exhaling, ‘let’s keep working on this and do better, ok?’

this year i opted to make More Of and a Less Of lists. more books, more flossing (my teeth, not dancing. although who knows), more connection with my girlfriends - text, call, carrier pigeon the moment i think of them!, more seeing the world, more love. less phone, less financial frivolity, less shit I don’t need, less complaining, less stagnant.

whatever we’re embarking on this year, be it big or small, i hope we can all try to be gentler with ourselves. treat ourselves like the first thing on top of our to-do lists, get better sleep and sweeter dreams, travel near and far, eat well, have delicious conversations, have great sex, learn more, do therapy, do something brave - whatever it is, i hope it feels good.

kicking off the second year of honey street with a fun recipe simply because it feels good. and it’s delicious, it’s something I get to do for myself and hopefully get to do for you. i hope you love it. cheers to a new decade, and beyond.

sweet + sticky thai honey chicken drumsticks
4 servings
prep time: 10 minutes
cook time: 40 minutes

12-14 chicken drumsticks, skin on

for the sauce:
1/3c coconut oil, melted and cooled
1/2c full-fat coconut milk (you’ll want the thick part and just a little liquid)
1/3c honey
2tbsp red thai chili paste
2tbsp coconut aminos
1tbsp fresh ginger
a few splashes of sesame oil *optional
2tsp salt
1tsp black pepper
1tsp garlic powder

preheat the oven to 450, and place the rack in the center of the oven. line a baking sheet with tin foil and set aside.
whisk the ingredients for the sauce until smooth. working in batches, coat each drumstick entirely with sauce, shaking off any excess. place on the baking sheet, and repeat this process until each drumstick is coated.

bake for 40 minutes, rotating the baking sheet 180 degrees after 20 minutes.

meanwhile, simmer the remaining sauce for 5-8 minutes on low until it thickens, whisking every so often. once the drumsticks are out of the oven, spoon the rest of the sauce over top.
